Chocolate Chip & Walnut Muffin

Sharing a simple muffin recipe adapted from Richard Goh's baking class.

Ingredients:
125g Self raising flour
5g Chocolate powder
1 Eggs
60g Milk
1 tbsp Rum liquor
80g  Butter, softened
50g Sugar
100g Chocolate chip
50g  Walnuts (Toasted & chopped)




Method:
Preheat oven to 200 deg C, line muffin tray with paper casings.
1. Sift flour & chocolate powder into a mixing bowl, add in chocolate chips & walnuts, keep some for toppings.
2. Mix beaten egg, milk & rum together, set aside.
3. Heat butter & sugar over a slow heat until butter melts. Combine the dry and wet ingredients together with a few fold till well incorporated. Avoid over mixing if a softer muffin is preferred.
4. Spoon the batter into the line muffin tray, top walnut & choc chips and bake for 15-20mins.
